Cowboy ‘Kos’

Serves 3-4 people

 Ingredients:

  • 1 tin baked beans in tomato sauce
  • 1 tin Bully/Corned Beef
  • ½ bottle plain chutney
  • 2 tablespoons tomato sauce
  • Two teaspoons fresh garlic
  • 1 large onion chopped
  • 1 green/yellow pepper sliced
  • 2 whole fresh large tomatoes
  • Black pepper to taste

2 slices fresh bread

Method:

  1. Heat some good quality oil in a sauce pan.
  2. Once hot add chopped onions, yellow pepper and cut-up tomato. Add the fresh garlic
  3. Cook in the fresh garlic and oil until the onions are translucent and yellow peppers and tomatoes have began to cook through
  4. Add the tin of baked beans and stir lightly with a wooden spoon
  5. Add ½ bottle chutney and tomato sauce and stir all the ingredients together
  6. Chop up the corned beef into small squares and add to the cooking ingredients
  7. Turn the heat down and allow the mixture to simmer until all the ingredients and flavors have infused and cooked through.
  8. Add pepper to taste right at the very end

Toast your fresh bread

Once everything has cooked through, spoon the ‘cowboy kos’ mixture over the freshly toasted bread and enjoy.
